Tantalizing Tomatillo Salsa
This tomatillo sauce has just a bit of kick and a very nice tang... like a cold drink on a hot summer night. It couldn't be easier to make... just purée all ingredients in a food processor, no cooking required. It's the perfect accompaniment to a chip, but also goes well with many different types of food (in the past week alone, I've had it in an egg bake and over meatballs). Get those tomatillos while they're available and make the most of them!
TANTALIZING TOMATILLO SALSA
10 tomatillos, husked and washed
1/2 red onion, chopped
1 jalapeño, seeded and chopped
3/4 c chopped cilantro
Juice of 2 limes
1/4 c water
1/2 tsp sea salt
Freshly ground black pepper to taste
Purée all ingredients together in a food processor. Store in the refrigerator in an airtight container.
Because this salsa doesn't contain any oil nor added sweeteners, I actually count it as a free food when using in a dish (like the egg bake or meatballs mentioned above). If you eat enough of it, you may be able to count it as a green container... and of course you do have to count whatever you are eating it with (so watch it with those chips)!
